Broccoli and cauliflower cake

 1 large cauliflower
 1 large broccoli
 4 tablespoons cream cheese
 4 tablespoons cooking cream
 4 tablespoons grated cheese
 breadcrumbs as required
 white vinegar
 olive oil

Cut broccoli and cauliflower into small pieces. Keep the stalk! In this recipe you can use all the broccoli!


Boil the broccoli and cauliflower separately. Drain and let cool for 5 minutes.


In two separate bowls put the cooked broccoli and cauliflower. Keeping them separate, with a whisk, fork or potato masher, reduce the two vegetables to small pieces, not too mushy but leaving some small sprouts. In each bowl add two tablespoons of cooking cream, two tablespoons of grated cheese and two tablespoons of cream cheese. Stir well to blend the two mixtures together.


Mix the two bowls of the broccoli and cauliflower together. Stir well to get a homogeneous mixture.


Add olive oil to the mixture. Sprinkle with breadcrumbs and stir.


In a large baking dish create a base of breadcrumbs to cover the entire base.


Add the mixture and add another layer of breadcrumbs to cover the entire surface.


Preheat the oven for 5 minutes and bake for 15 minutes or until browned. Serve hot
